If you ever see it list salchichas on the cubana then, I'd suggest steer clear and/or ask them to sub out extra ham or w/e. Future advice.

Probably bit of Crema (sour cream), which is appropriate. Common condiment on tortas. Putting guac on al pastor is heresy, though. Shun him.

If you're in the southwest, you'll need to find the tiny little taco stands or mom and pop mexican places to get them. But they're great.

It basically was a hot dog. Mexican Salchicha is a common torta filling. It's basically hot dogs. Try a Torta Milanesa. Breaded beef. Bueno
