Blaming single generations might be a bit unfair. Lots of this is down to the slow pace of progressive thought vs the payback from traditionalists and those who lose power and money by a change in the status quo. We are where we are because of and despite the previous generations. Very slow, painful steps :(

Yep, absolute key point is to pre-heat the tray with the oil in it until it is very very hot, batter must go in to the hot oil
