Station ring may still be slowly spinning down after losing gravity, allowing water to "float" from changing acceleration. It's a stretch.
Waiters/Waitresses somehow always manage to be there and ask at the moment you take a bite and your mouth is full... never fails

It's called a "fish cake" w/ swirl for decoration. Similar to the imitation "crab meat" in sushi. If you buy them sep they can be delish tho
