I believe that the title refers to the substitution of a leaf for a plate... in Indian cuisine, a sauce is more a flavor bomb for the rice and bread, which absorb the sauce and allows for variety between bites. Portioning the sauce for the size of your bite is easier to control when you eat with your hands.
