Brisket is my favorite thing to smoke. I've tried a bunch of ways and found the easiest is to put on at 10PM at 185 till morning, then turn it up to 225 till it gets to temp. Wrap in peach butcher paper or foil at 160ish, and pull at 205. Absolutely let it rest for one hour in a warm ice chest or oven before serving.
