My family have used pickled red onions forever, but I understand different people use different recipes as they were brought up with other stuff
This is not Shawarma, I speak from being Lebanese myself. Also the sauce should be Tzatziki not something with mayo, and there is no sumac in this recipe. I DO understand though that different cultures are different when it comes to food
