If you'd like, here's my recipe: 1 C flour, 1 C sugar, 5 tbsp butter, 3 bananas, 1 egg, 1 tsp vanilla, 1 tsp baking powder. Bake @ 350 1 hr
With 3 cups of flour you want like...6 bananas, that's a big loaf. I'd cut back on the coconut oil a bit too.
Def need some baking soda, maybe about 2-3 teaspoons. There's nothing in there currently to make it rise. How many bananas you using?

Maybe I've never had it prepared "right", but the texture of squid/octopus always bothers me. It doesn't have strong flavor, just rubberry.
