I do 2:1:2 and then mix that 1:1 with brown sugar, mop with olive oil emulsified in apple juice

They most likely had a small slice taken off of the bottom to get them to resist rolling and stick to the cutting board. Still very sharp

Keep an eye out for a used one, the are repairable, parts are available quite a ways back. Neighbor picked one up for $30
