I’ve always heard it pronounced ‘no-key’. So. Yeah.
Mustard binder, with a tiny bit of liquid smoke mixed in. Rub was one part salt, one part black pepper, two parts brown sugar. Didn’t really measure the rest of the seasonings but it also had onion and garlic powder, paprika, cumin, red pepper, cayenne, parsley and lemon pepper. 3-2-1 at 280°F the whole six hours, applying homemade barbecue sauce in the final hour.
