Yeah as a FOH manager, a 35 minute ticket for a 2top I’d end up comping it and climbing down the lines throat for a few minutes.
That being said for a 30top, I don’t know what you expect. There’s 30 of you and probably at most 5 cooks on line.
I mean working in the service industry that’s a long ticket, even for a scratch kitchen. Ideal would be somewhere closer to 20.
