3% of $1000 is $30, which is taken out of the server's tips, take that times 25 servers makes a decent chunk that gets distributed to BOH. 2
At the restaurant I work at servers pay out tip share which is 3% of their sales for the night. Average $1000 sales on a Friday night (1)
