In France "café = espresso", black coffee or Americano is "café long" or "café allongé"

If you dine at michelin's starred restaurant maybe. Everywhere else there's salt & pepper, and quite often mustard & vinaigrette

And most of our terroir is about animal product. Vegetarians and vegans might feel out of place in French cuisine
