Newegg has an EVGA SC2 1080 for $500 bundled with Destiny 2. There's a 1080ti on Ebay for 650 right now. No sense wasting money here.

The colourful thermals can be on the same camera its simply a setting. Useful for looking for different things.

This camera is currently in IR mode. Infrared is used to detect volatile organic carbons. These cameras play a large roll in leak detection.

You are correct actually. This is an IR camera, it can do thermals too, however its bouncing wavelengths off of VOC's in the above gif.

FLIR sell em. I've played with this camera. Costs just over $100k and you get put on a government list for owning one.
