Depending on the airspace your operating in, and at these altitudes I would hazard its class G (or even E honestly), transponders are not required equipment. Now, during any investigation the NTSB can use evidence of deactivating a transponder as intent to hide otherwise known illegal acts. Basically removing your ability to say "Sorry, I didn't know."
Not exactly as these appear to be departures. Most* arrivals follow a precise 3 degree glide slope A stabilized descent will optimally have a constant airspeed and rate of descent until crossing the threshold. Preferably you'll cross the pavement at about 50 feet, ensure you're aligned, and reduce the descent rate for a more preferable landing. Departing on the other hand doesn't have quite the same consistency. Airport, Aircraft type, departure requirements, ATC can make big differences.

His videos are tailored around non-aviation viewers so everyone can understand and enjoy them. What the comment is stating to understand are "ailerons". Which are a primary control surface on the outer trailing edges of the wing that move up and down in opposite directions to help the aircraft roll about the longitudinal(roll) axis of the aircraft.
