I've never made mead before, only beer so perhaps it is less important and infection is not so much a thing with mead. Regardless, I'm sure it'll taste good 2/2
Hope it tastes excellent. Fellow homebrewer here with not a correction as such but an opinion: in beer making, it's generally not a good idea to stir the beer during the fermentation stage as you can run the risk of contaminating the batch (the real reason for sour flavours in beer). Once the airlock is in, leave it in. Some gentle stiring during the mash stage perhaps but not vigorous as this can cause oxidisation when it's hot. There also seems to be a lot of headroom in that vessel but 1/2

Put egg on roof, put chicken on egg, put hot pan below, record.
Or cut the screws down so they still sit flush, and apply some blue thread lock
