Yeah it's not for everyone, but you can totally omit it, some people also like mascarpone or cottage cheese and some people like bechamel!
It's just salt! I have never seen it like this before either, but having tried it, I can now report it's just regular salt!
By any measure, but I did use a lot of ingredients commonly used in Asian dishes, hence the inspired.
I'm danish and I saw an Asian inspired coleslaw that a danish chef made, I changed some things and added the noodles. Not authentic or Asian

An aged havarti cheese (its a danish cheese) and I said inspired because I've never been to Philly or had a cheesesteak so I can't compare
