ii/V/I progressions are based in major, not minor.
My point is that the effect of a chord is a pointless discussion without knowing the role it will play
It holds true with any quality of any kind of chord. An am7's soulfulness will differ if it's a ii/V/I in G vs. F

Various modal scales can be used effectively on corresponding 7th chords (dorian for minor 7th,mixolydian for dominant 7th, major for major)
chord progressions will use various 7th, major, minor, sus, and other chord qualities. Pentatonic scales can be used to improv over them
Major & minor pentatonic scales simplify major and minor scales, and are commonly used for improvisational purposes. Different (3/?)
Different 7th chords have different functions. Dominant 7th generally lead to the tonic, major and minor have specific tone quality (2/?)
Sus chords "sustain" previous harmonies from earlier chords, or add more color/tension to chords that will eventually be resolved (1/?)
No minor or major 7th chord is more jazzy or soulful than the other, it's a matter of tonal context. Source: Music teacher of 10 years
