Most places I’ve been to also steam the bun. The hot dogs are in the buns and kept in a steamer until ready to serve. Otherwise it’s just a “hot dog tout garne avec salade choux”
Shredded cheese is used in some restaurants. Fancy places give you the choice of curds or shredded. So up here when we say cheese curds we’re usually talking fresh cheddar before it’s been pressed into blocks. If you can find some really fresh cheddar you’ll notice it’s kind of crumbly. That’s the curds that have been squished together into a block. So if you can’t find curds I’d recommend getting the freshest cheddar you can find and crumble it into pieces or cut in cubes.
Boiling will remove more of the fat and salt/flavour from it.
I’d really like to go but I can’t take my wife for this reason.

That was delta. We’re dealing with omicron now. This spring the province next to us had mandatory masks & we didn’t. They had more cases.
Ya. Built back bigger and better than ever. Has a small restaurant inside now and an upper level viewing area to watch the factory floor.
Supposedly there’s a rare type of clay in the soil around here which is what makes the cheese special.
