How does one go about creating something like this? How do you know if it's even beatable, or is that not the point?

This being one of the coolest scenes that I remember when I watched it as a kid, I was really confused after watching the DVD and this entire scene never happens. Come to find out it's only in the special edition release and was never in the theatrical release.
