Now that I think about it, I did maple glaze on mackerel before. I added a bit of soy sauce and garlic and thickened it up on the stove
I've heard thickened maple syrup makes an awesome glaze, same as honey, but I've never tried them myself. Give glazing a shot in my opinion
So it will need it to help keep it from drying out too much.
I've never done a pheasant, no. I've done whole chickens before and best advice I could give is brine it over night. Poultry isn't fatty 1/2
