That's a dry cure streaky bacon (belly) with salt and brown sugar, cold smoked over applewood.
You should try it yourself, it's very rewarding.
Good for them, I'm sure they know what they're doing. Still not the same thing, though. It's worth researching if it's something you're into
Smoking and curing are 2 separate though well worthwhile things to do. Smoking preserves meat (to an extent) but doesn't cure it.

Yep yep, 1.1.8 ratio for salt sugar and water. Then dry rub with salt and hot paprika/garlic powder/black pepper etc etc
Also works well with pork shoulder, but you want to brine that overnight beforehand. 145f is cooked internal temp then wrap it.
