I've found the most consistent results are actually by letting it ferment for 48 hrs or more in the fridge and folding every 8hrs or so

With all 3 heating elements on it'll do about 3kw needs a 240v 15amp plug, I had an electrician put one in for it :)

My go to recipe 500g flour, 335ml water 2 TSP salt 2 TSP sugar 2 TSP dry yeast 2.5 TSP oil mix in bread mixer then let ferment for 6-8hrs
