If you can't afford to pay your workers a livable wage you shouldn't be in business. If you're suggesting that a business can't be profitable unless they pay scraps then you can literally look at any other developed world and see that it is not the case.
Even fast food chains who are repeating the same rhetoric are paying a lot more for their workers in other countries and food is also cheaper. This is about max profit margins at your expense by directing the responsibility of the business.
Big idea why not ask to not be paid a shit hourly wage from a business that is clearly benefitting from paying scraps and allow tips if customers chose to like nearly every other developed country.
