Think it more depends on demeanour and personality of your cat, I have one who I have never once caught on the tops.
They all have access to as well as access to our garden front and back whenever they need it. Still won’t stop them

I urge you to set up a camera overnight and when you aren’t around
I’ve had 6 in my lifetime, my grandparents have had 2, my auntie has 4. Cats aren’t dogs the boundary is not to do it while you are around
I’ve had cats burn their feet on the still hot hob, and that didn’t stop them you can definitely teach them not to do it while you’re there
My cats aren’t allowed on the tops, sofas or bedroooms, they just don’t do it when we are around. If you had a camera you would be surprised
If any cat owner looked at countertops close enough they would see this fact

But to boost confidence in your own vaccine I have only had one dose, caught covid a couple of weeks ago while staying with parents who (1)
I understand that I can only speak from my perspective and family dynamic. I guess living abroad not seeing your parents is somewhat normal
