yep, last major flood was just before the pandemic, took out the bridge in Kingsland... but change would require recognition of climate change and that sure as shit ain't happening anytime soon, especially in oil rich Texas

thankfully not all of us, even from here in Austin that flooding looked insane... our main water reserve in Lake Travis went from 43% capacity to over 60% just this past week, crazy amount of water

I riffed on a couple of different recipes I found after posting, turned out great

1.5 pounds of cucumbers, drained the fluid after salting but without rinsing, sliced thinly
6 tablespoons of rice vinegar (3/4 cup)
2 tablespoons of light soy sauce
2 tablespoons of toasted sesame seeds
1 tablespoon of toasted sesame oil
1 clove of garlic
2 tablespoons (I enjoy spicy food) of vietnamese style chili garlic sauce (Huy Fong brand for me)
1 tablespoon of honey

probably? I mean, I just made another batch and it's delicious, I doubt it will last more than a few days before I finish it.

Though I have been guilty of leaving things in mason jars for WAY too long, and the vinegar probably killed off any chance of actually pickling the batch, but that would be interesting...
