Hey!

A great weekend is a weekend spent with this lovely girl here.

And being busy cooking meant having Tumilik by my side all the time. We had some visit over, and I was asked if I could take care of supper...as long as I didn't use any hot peppers. Seems I'm known for my spicy food, hah.

So, I decided to make some Maritimes food... The famous East Coast donair. I got 3 lbs of ground beef..

This is the spice blend I use, for now. I still have a few boxes of those left. When I'll be out of stock, I'll just make my own spice blend. But that one here works very, very well. You need 2 tbsp of spices per pound of meat.

It's cooked like a meatloaf, in the oven for a while.

For the donair sauce, I use this...one can of sweet condensed milk, ⅓ cup white vinegar, 1 tsp of garlic powder, 3 cloves of garlic, chopped.

Using a stand mixer, I whip the ingredients for about 12 minutes. Starting slow at 1, then building up speed up to about 5.

In the end, it makes a very thick and fluffy sauce. Many fast food restaurants have a very runny, liquid sauce..and I hate those so much. Those who tried my donair sauce said it's one of the best they ever had.

Yummy, yummy.

It was very, very good.

I played a lot of music, and Tumilik never really cared.

Loaded, and good to go. I hate to strap down that kind of crap. A lot of small parts, especially in the middle, with irregular edges, uneven heights, round extremities, and limited places where straps can be placed properly.

And someone here had the audacity to tell me that I tight my straps too much.

Really?

Anyway. Let's get going. For music, we'll continue on the theme I had last week.

Alright. That's it for today. I might come back to the truck for the night later, as tomorrow I'm supposed to have a very early start. This will allow me an extra hour of sleep, while also avoiding waking Tumilik in the middle of the night.

Apparently when I leave very early she becomes very annoying for the people sleeping at home, heh.

Tumilik was treated with a treat when I arrived. She was very happy.

I had a bunch if chicken drumsticks to cook. They were supposed to go in the smoker yesterday, alongside four racks of ribs...but we've pushed them ribs to next weekend.

So..I improvised a rub.. chili, ancho, chipotle, garlic, and onion powder, oregano, thyme, cumin, maple sugar, salt, pepper.

Gave them drumsticks a massage.

Paired with veggies.

And 45 minutes later I had 21 drumsticks. It was quite good.

Alright. That's it for today. I'll head to the truck later, after walking with Tumilik. Oh, I also came up with a rockabilly song..but I'm still working on it..I mean, I can't play it right yet, hah. Being a metalhead, I'm used playing a certain way and trying rockabilly challenged me in playing differently... so once I'm more comfortable with that style I'll make a clip or something. I also came up with a melody while walking with Tumilik last night. Once I got home I figured out what I had in my head and recorded a quick demo just to remember how to play it. It's got a little Johnny Cash vibe.

#1 did you see that Moosehead is now selling a pallet of beer? Rockabilly is certainly an interesting branch of rock. Makes you want to get moving.

You'd be hard pressed to find them outside of Atlantic Canada, and the further you get, the harder they will be to find. They are fantastic though. If you can't find them, you can probably do what OP did and make your own. Even if you can't get a spice kit, there's likely recipes for that you can find online as well.

Your weather has gone the way of ours. Sunday was a beautiful blue skies sunshiny day. Now it’s just grey and bleugh. Blooming chilly too! It rained yesterday and dumped half of Arizona on my car. Sand everywhere. I quite enjoyed the hillbilly music. I’m glad you have enjoyed quality time with Tumilik. Donair looks good too! 😋

Nice, Moosehead beer. Did you know the sell a "President pack", basically a pallet of beer. 1461 cans, one for each day for the next 4 years. ( They included a extra can for leap year ) It comes out to around $1.70 a can ( I'm guessing Canadian dollar) https://mooseheadbeershop.ca/products/the-presidential-pack

The recipe is very simple, and easier if you have a stand mixer. Combine all the ingredients, and start skow, building up speed to half of what the mixer can do, and near the end after 10+ minutes, decrease until full stop. And use the regular sweet condensed milk. I think it's gezuckerte Kondensmilch.

I can't dance. I struggle at cooking scrambled eggs. I can't cook French toasts. And yes, that Gretsch is amazing! It was actually gifted to me, which is really nice!

The trick with eggs is the heat. People have a tendency to use too much, and the eggs cook too fast. So try lower heat. Also, be a little sparing with the spatula, especially in the beginning. If you stir the eggs too much they can't develop much form. I'd say "eggs are cheap so experiment," but lately... ouch!

Been there and done that. Secret is using a bit of butter and scrambling the eggs before introducing them to a hot pan and quickly stirring. As soon as the whites are cooked take the pan off the burner, let the ambient heat finish making the eggs as hard scrambled as you like, and then plating them at once. Then season while they’re hot.

Gordon Ramsey adds crème fraîche to his so I’ve used a little sour cream too.

Yes, your tip about ambient heat is so right. You can turn off the heat before the eggs are fully cooked, but cover them and wait a few minutes and they'll finish by ambient heat. Crème fraîche is a great addition, for that extra special flair.
