Jamaican ox tail, anyone?

Its a unique flavor, one that you dont really find in the states. Its amazing.

2.5 lbs oxtails
ΒΌ cup brown sugar
1 Tablespoon soy sauce
1 Tablespoon Worcestershire Sauce
1 Tablespoon salt
2 teaspoons garlic powder
1 teaspoon black pepper
1 teaspoon ground allspice
1 teaspoon browning
2 Tablespoons vegetable oil
1 yellow onion chopped
4 green onions chopped
1 Tablespoon garlic chopped
2 whole carrots chopped
1 scotch bonnet or habanero pepper seeds and membrane removed and chopped
1 cup beef broth
1 Tablespoon ketchup
1 teaspoon dried thyme
2 Tablespoons water
1 Tablespoon cornstarch
1 16 oz can Butter Beans drained

Chop

In a large bowl mix the oxtail with soy, worcestershire, garlic powder, garlic, browning, and pepper.

Sear

Add the vegetables. (except the beans) I was learning on the go. Here I had forgotten the thyme. In hindsight, the correct way to do this is to get a larger soup pot, put the vegetables in and soften them. Then in a separate pan, sear the ox tail, add all the other ingredients to the oxtail. Then combine all (except the beans) in the crock pot.

8 - 10 hours.

Throw some rice on. And add beans about 30 minutes before serving.

Its actually really good. Like, stupid good.

I had oxtail stew fairly regularly as a kid, and lots of Jamaican food, but never this.

I didn't want to mix all that meat and stuff in that tin bowl with bare hands. Plus, I used to cook for a living, so its a habit. I change them during phases of cooking. That should be a good thing. But honestly... Who cares?
