Recipe - makes about 4-6 flatbreads:
3dl mashed potatoes, not too thicc and not too runny. juuust right. I added some milk to mine to make it a bit more loose
1 egg
1dl flour of your choosing, I used a dark wheat flour of some kind
a good sprinkle of salt
aaand I added a random amount of shredded cheeses (parmesan and cheddar, maybe around 0,5dl?)
preheat oven to 225 celcius degrees
mix egg into the mashed potatoes, add salt, and then add flour and cheese, mix mix mix. use a tablespoon to put blobs of the dough onto a baking sheet, flatten with floured (is that a word?) hands. poke holes with a fork. Bake for around 15 minutes, or until there's some black-ish spots like in the picture
ps. the dough should be soft, but not runny. You're supposed to spoon it onto the baking tray. Putting flour on your hands before flattening them out is important, or else you'll have a sticky mess.

It sounds good but i think if i were making something with mashed potatoes I'd make croquettes... I'll have to sit on this to decide

We have potato flatbreads sold in the grocery store too, but these were definitely much better than those
