The other week we made Pachamanca, which is a Peruvian dish baked with hot stones (from Quechua pacha "earth", manka "pot"). We dug a hole, made a fire and then placed stones on the charcoal. Once the stones are properly hot (some 600°C as you can see), you can put your food in there:

Also big chunks of meat which I didn't take a photo of, since it wasn't as photogenic....
Originally the veggies and meat are wrapped in banana leaves. Since there is a certain lack of those in Germany we used cabbage and aluminium foil.
You then cover the food packages with the hot stones, in our case a soaking wet blanket and finally some sand. The stones actually don't need to be *that* hot. 150°C would be enough
After two hours you can carefully retrieve the food and enjoy this very yummy dish.
I'm very sorry I don't have any photos of the finished food, but it smelled so good, we immediately had to dig in! Everything was well done, the meat fell off the ribs and the veggies had some nice spices. 5/7 would recommend
