That's no longer canon. The new canon is that Sith lightsabers are red because dark side users "bleed" regular kyber crystals and turn them.

The Jedi hunt natural crystals as part of their training. The different colors usually signify their role in three Jedi order.

It's only during the creation of the lightsaber. Nothing would stop Darth Vader from using Luke's green lightsaber for example.

The way Sith create their sabers is by bleeding the crystal, which causes the crystal to bleed, hence the red color.

The process of bleeding the crystal is always red. You can only get other colors by putting energy from the light side of the force into it
