Any private establishment has the right to set rules for the public entering, such as 'no recording or videoing' and other patrons also have a reasonable expectation of privacy... also, they are disrupting the operations of the business.
Ask for permission and if they say yes, go crazy, but take note that recording audio without consent can be a crime in some states.

So, I was in the 1990s... the Cold War had just ended and the last of the Vietnam draftee NCOs were retiring... the only people with real combat experience had gotten their CIBs from Just Cuz (and an E7 who got his in Urgent Fury, with a mustard stain from a Ranger Bn); we had just RIF'd from 20 divisions to 10 and anyone with a blemish on their record was getting a check and a DD214.
What was left were the professionals, the people who wanted to be there and none of them wanted to kill anyone.
