Record in 10fps, don't make huge gifs. You can also remove extra frames and optimize gifs with Photoshop/GIMP to save space.

Well, there are 2 things to consider: the amount of images and the size of the images. Use every 2nd or 4th frame, rescale size. Done! :)

As a GIMP user, don't spend too long fighting with it. For one, the Text tool is almost a joke and applying to multiple layers is a pain.

The Text tool is actually quite easy to use, and applying to multiple layers is as easy as copy-move-merge, copy-move-merge.
