Yes. You'd have to inject it into the tomato. Or cut the tomato, slather in cream cheese, then pop it back together and bread, before deep frying. But I'm pretty sure I could pull that off and I'd be awesome!

Yea, tomatoes are mostly water, not a super great option for frying (OPs video looks fake too) I think though if you did it in a similar way to a stuff pepper/jalapeño popper maybe you could make something serviceable, but at that point, pepper would be better.
I suspect like many tomato-based foods, it may also depend on the quality of the tomato. (I eat a lot of tomato sandwiches and the delta between 'meh' and 'best sandwich I've ever had' is WIDE and 100% based on the tomato.)

Sun dried tomatoes are an ingredient, yeah. It's like tomato paste- are you just eating that from the tube? Uh, hopefully not. But it's still a nice thing to have for adding richness to food. Sun dried tomatoes still have some degree of structure, which isn't always what you want, but it has a place.
