If you have trouble melting your cheese, add a slice of american cheese. The sodium citrate in american cheese helps everything melt.

Equal parts flour&butter, add about 2x milk, stir until gravy like consistency. Add about 1tbs of your spices depending on your taste 1/

The flour is to create a roux which stabilizes the sauce. Cutting it out would result in the dish separating into a greasy mess once cooled.

Bechamel + cheese is called a mornay sauce. You typically use either gruyere, emmental, or white cheddar, but you can really use any cheese
