15lb brisket someone didn't pay for so my butcher threw on sale.
I gladly took it off his counter!
3lbs of fat taken off the thickest part that would become smoked brisket. Cut off the thin end to make pastrami
Salted and dry aging for 3 days
First load of coals and a hickory log
13 hours later. Look at that beautiful smoke/age ring
Hands down the best brisket I've made yet. Now I just have to wait for the other half to cure to make pastrami

I hate you so much right now bc I have no brisket. That looks so beautiful. I will smoking a turkey for Christmas tho.

I stopped eating beef and pork just about a year ago now, and I’m willing to break my diet just for that marvelous piece of meat
therealgrennhald
Fuck bud, why would you do that to yourself?
OddleNoodle
Health reasons. I found that beef and pork were messing with my stomach, and lead to some pretty bad weight problems
therealgrennhald
That sucks bud. I get stomach problems with a couple things too, but sometimes I sneak them in when I have the next day free.
therealgrennhald
Sometimes it's even worth it :P
