15lb brisket someone didn't pay for so my butcher threw on sale.

I gladly took it off his counter!

3lbs of fat taken off the thickest part that would become smoked brisket. Cut off the thin end to make pastrami

Salted and dry aging for 3 days

First load of coals and a hickory log

13 hours later. Look at that beautiful smoke/age ring

Hands down the best brisket I've made yet. Now I just have to wait for the other half to cure to make pastrami

I hate you so much right now bc I have no brisket. That looks so beautiful. I will smoking a turkey for Christmas tho.
