Went with more meat for the patties

Very satisfied with the cross section

Home made burger buns.

As requested, here is the recipe (8 buns):
440 grams of wheat flour type 500 (all purpose flour)

One big egg

One small egg for the egg wash

4 teaspoons of butter (40 grams)

half a teaspoon of salt (8 grams)

one and a half teaspoons of sugar (24 grams)

20 grams of fresh yeast or 6 grams of dry yeast

sesame seeds

200 ml of warm water

Two tablespoons of milk

Tablespoon of olive oil - if you don't have any oo, aby other oil will do

1. Pour 200 milliliters of warm water (about 40 degrees C) into the bowl. To reach this temperature, I boil water and then mix it in a 1/1 ratio with mineral water and wait 2-3 minutes. If we can put our hand in the water and it is warm, but it doesn't burn us, it has the right temperature.

2. Dissolve 20 grams of yeast, 12 grams of sugar in water and add about 150 grams of flour. Let the solution stand for about 15 minutes, during this time performing the next steps.

3. Break one large egg and mix thoroughly in a bowl. In a separate bowl break and mix the little egg together with two spoons of milk.

4. In a small pot, melt two teaspoons (about 40 grams) of butter. We make sure that the butter does not burn. When the butter melts, turn off the gas and go to the next point. You can also do it in a microwave, but it in a cup and heat with max power for 15 - 30 sec (depending on your microwave's max power)

5. After about 15 minutes, our solution from water, yeast and flour should have doubled in size.

6. In the solution pour the mixed big egg, melted butter (which should no longer be hot), all of the salt and rest of the sugar.

7. Add the remaining flour and start kneading, which should take about 15 minutes. If you use a food processor, turn on kneading at the lowest speed.

8. After about 15 minutes, our dough should become very delicate - don't worry if it's a little bit sticky, as long as it does not separate you are good.

9. Put the dough into a bowl smeared with a spoon of olive oil. The bowl should be covered with a towel or foil. Dough should rest for an hour, so it can double in size. Room temperature is suitable for rising.

10. Divide the dough into eight equal parts, which you then form into balls. Place baking paper on the backing tray. Now you can put the dough balls on to the tray and flatten them delicately with your hands. Keep a little distance between the disk. Cover all with towel for an hour.

11. After about an hour, remove the towel and proceed to the final preparation of your burger buns.

12. Use the egg wash to gently lubricate the top of the buns - I used a pastry brush.

13. Sprinkle with sesame seeds.

14. Bake the buns for about 15 minutes at 200 degrees Celsius in a preheated oven. Use the middle section off your oven. Check the button of the buns after 10 minutes - if it's brown and the top is still white, you can move the tray higher.
