Wings and backs

Starting with some chicken wings and chicken backs. Lots of bones and cartilage

Onion and carrots

I like the colored carrots

Frying the Chicken

Frying to get a brown stock, I think it has a much richer flavor

Caramelizing the Veg

Giving the carrots and Onion some love

Put it all together

Add rosemary, bay and some water, and it's ready to pressure

Pressure cook

Letting it reach pressure and sit for 1.5 hours. Love my pressure cooker

Strained and ready to be frozen

All done! I like to freeze my stock into cubes and through them in for some extra flavor here and there.
