Lots of webbing, indicates where bees pollinated the flowers lots of times; a dark yellow spot indicates long ripening on the vine 1/2

2/2 stem should be shriveled, otherwise not mature; dull and not shiny, indicates longer maturation (like oranges). Dunno about sound hollow

Hollow sound is meaningless. Each melon has a tendril near where it attaches. When it's ripe the tendril dries up.

Yeah I just bought a couple Dulcineas (BOGO ftw) but they did not have any dark yellow ones, just pale. Do they ripen more in the fridge?
