Maybe it’s time to follow it all the way through.

Oh I definitely don't follow directions exactly. I cook my onions more, add more garlic, sear/brown anything that can be, and sometimes cook everything in one pan where feasible.

Its more of a suggestion but for me usually the end result is way better

My GF does this. Her cooking is crap and she wonders why mine come out so good.

If you like Italian food, use a Marcella Hazan recipe and follow it TO. THE. LETTER. Her bolognese recipe is a day long cook, but oh my god its so worth it.

I can't cook with recipes, that's why I'm a professional cook and not a baker.

My wife sends me recipes as more of a "we should cook something along these lines". The overwhelming share of online recipes I've seen are utter garbage when it comes to measurements and times. Gotta cook with feeling!!

*disappointed with the meal as a result

I rarely use recipes for anything whether baking or cooking. Mind you I've been doing both as a career for almost 30 years

I follow a recipe to the letter once (or twice if I fuck it up). Modify as needed. If modification goes far enough, I write a new recipe.

90% of online recipes I get from Allrecipes.com because they're generally basic, but other people submit ways to tweak to make better

My daughter doesn't like to eat some things my wife makes. Daughter creature said to her succinctly "Dads cooking is better because he follows the instructions".

You do it as written the first time. After you see how it comes out, then you can start altering it to fit your tastes.

This

Precisely. I've heard people say they never follow it as written but I think it's worth trying at least once. Then adjust accordingly.

If you don't follow it, you lose the right to critique it. I used to do a recipe blog and I was always pissed at the people who came back to specifically say they didn't follow directions and didn't like what they made.

I follow recipes to the letter. Cut film to vent. Microwave on hi 3 minutes. Stir. Microwave on hi additional 2 minutes. Let cool 1 minute.

We all know you aren't letting it cool for 1 minute.

Sounds like my wife, who is utterly convinced that Waze and Google Maps are worthless because she disagrees with the directions they give and she always goes her own way...

Google maps is OK but in my area it will take you miles put of the way to get you on a turnpike where you have to pay money.

Isn't there an option to avoid toll roads?

2 years ago | Likes 1 Dislikes 0

Yes, but what I was talking about is the way the maps app will take you several miles out of the way to get on the toll roads. It makes the trip *longer* if it can get you on a toll road.
