Cooked some steak yesterday for myself and my wife to have in rolls. Was so tender it was tearing as I cut it with my knife. a perfect medium rare

Had it in bread rolls with spinach, alfalfa, tomato, and homecooked onion jam. It was so tasty!

I let the steak sit for a couple hours to get to room temp (it comes vacu-packed by the shop I get it from so it's safe from bugs). I coat it in a steak seasoning with a bit of olive oil on all sides, and sear on high front and back, rotating as I do so, so it doesn't get black sear lines on it, while also searing the sides to keep the juice in. Then I reduce heat to a medium-low, still rotating it while I do so, and prepping the rest of the stuff I need. Let it rest for a bit, cut and enjoy :)

Nicely done! I see you like it as rare as I do. Have you tried doing a “Pittsburgh” or “black & Blue” yet. So delicious. 600-800 F sear add butter directly for 30-40s each side rest for 5. Delicious.

not a big fan of char on the outside of my steaks. Holdover from my mum cooking minute steaks until they were like dusty shoe leather. It's why I taught myself to cook steak, so I can enjoy a nice one whenever I want

Onion Jam is so easy to make, too! cook red onion with a little bit of oil until it's soft, then add a tablespoon of brown sugar per medium sized onion (a little bit smaller than your fist), then add 2 teaspoons of balsamic vinegar and let it reduce. The leftover balsamic caramel can be poured over fries or potato wedges for tasty sauce

they were fairly small steaks, so putting them into a sandwich upgraded them from snack to meal haha
