Making german Oven ribs

first you season them with salt and pepper, then let them fry in a pan until they have some real color. the meat inside will still be raw.

then I added onions, a small celery (not the green one) and carrots and fried them in the pan. Added wine after the vegges were brown and let it cook. When it had reduced properly I added some beef stock. I poured the stock on the ribs and then let them cook in the oven for an hour and 30 in the stock, covered too.

After that I poured the stock and made gravy from it. now the ribs are getting hot again in the oven for dinner. You can see the bones falling out.

They are tasty too. Pig by the way. Fall straight of the Bone after the last Heat. And then you dip them in the gravy
