So this is how it turned out, fried rice a lot tastier than it looks. Carry on for the recipe. Cooked this for our 6th we'd anniversary, which unfortunately we forgot. *shrug*
So start out by dicing your carrot small, like so. I only used one small carrot for two, as other veg is going in too.
Next up I used a part of a big courgette, as it's my favourite vegetable.
Cutting it into strips first helps you dice it
I used one of the cool-in-the-bag things for the chicken. They always come out pretty juicy and flavoursome
My chicken expired several days ago, but it smelt ok *shrug*
Once you dad the bag spices
I added oil because flavours
It ends up like this before you put it in the oven
Oh I forgot, meanwhile, cut a few spring onions
So I cut a piece of root ginger about this big...(nice slippers, right?)
But by the time you trim off the stuff you don't want, it'll probably be this big
Fry off your aromatics (ginger, garlic, white part of a spring onion, chilli) for a minute or two first. I used chilli oil and sesame oil)
Then add your veg before the garlic browns (brown garlic tastes bitter)
At this point my husband decided he wanted sweetcorn. Be sure to season with salt and pepper to taste
While the veg is frying, mix up some eggs, ground white pepper and a pinch of salt. Whisk it.
Add precooked rice that has been allowed to cool. Mine is so yellow as I added turmeric, 2 bay leaves, a few cloves and cardamom pods during the cooking of it. The rice had cooked for about 45 minutes prior to frying, on a wide plate
It looked good at this stage but I added dark soy sauce for flavour
Soy sauce added, now mix
Add your mixed eggs
Medium heat
Serve up and pretend you never forgot your anniversary!
