Clarkson’s Farm 3 grew them in n old air raid shelter with minimal equipment—but also lost the second batch to mold. This looks like a lot of nooks and crannies to sterilize between crops.

It does, but stainless steel can be power washed in bleach solution, which does well for sterilization. Hygiene is always an issue in mushroom farming.

These can do both, really. In the same way a weed farm can grow tomatoes.
