I got a cheap little propane smoker from Canac like 6 weeks ago & after puttering around with it for a while I finally got confident enough to try to tackle homemade bacon! Psyched to try it!

Hardware/home goods store with crazy prices. Smoker I have goes for like CAD$350 at most of the places you can get it around here. Was CAD$229 at Canac.

Yeah I’m just reading online & trying stuff - today was a first attempt to learn & improve :) We’ll see how it turned out. The fat one is a garlic powder & pepper cure, the skinny one is just pepper (obviously salt & Prague powder also)

I actually do a coffee cure based on Ruhlman's basic cure. The coffee is extremely mild, more aromatic than flavor. But my family and friends like it. Good luck dude!

So FWIW I think I went a bit too heavy on the smoke. The garlic powder cure ended up being less garlic and more salt, making that bacon a bit too salty (the fat segment).

But I learned a LOT and I’m gonna get 5kg more pork belly and try again
