Oregano, I want to start with a handful of herbs as I've not grown many edibles. I have mostly been a houseplant person. Thinking of rosemary, sage and oregano to start!
We did grow a few sunflowers in our flower garden last year and they were stunning. I really love the darker colored ones.
Zucchini is one of my favorite veggies, I'd love to see if I can grow this interesting white one.
One eyed, one horned, flying purple pepper eater... I am really drawn to fruits and veggies that are darker in color, purples and reds. Things you don't see too often in the local markets.

Another beautiful striped melon, would also love to grow and taste

If you like dark plants, I'd also recommend red Basil. Tomatoes and gourds are fickle things where I live, best success I had with those 1/2

Years ago I grew an African Blue Basil which I also recommend

Tomatoes are a good idiot-proof place to start! Herbs are also great and many are evergreen. Lavender is also a must! Good luck and enjoy!!!

I guard lavender is good at keeping deer and bunnies away, so I will definitely try some! We have both here.

Throw in a butterfly bush if you're having a deer/bun issue. Not edible but d/b don't like them, bloom all summer, and attract pollinators:)
