Spaghetti Carbonara is my comfort food recipe, it brings me back to center, it puts my stress levels back to minimal. Reminds me of college.

Looks good, but use guanciale instead of bacon, or *at least* pancetta.

Its acceptable it's just not authentic. If you can't find gaunciale pancetta is preferred. Bacon has a strong smoke flavor.

I use bacon becase guanciale is difficult to sorce where I am. Also bacon rocks. Though, I won't call my carbonara authentic Italian, just delicious.

Id use pancetta before bacon. The smoke of the bacon just overpowers the dish.

What about salt pork (Hormel)? It seems like bacon that is not smoked (cured instead)?

You can use whatever you want. Anything that's fatty works. My comment was more about it being authentic whilst using bacon. Bacon is fine if that what you have. Ham is fine if that's what you have. It was just about the "authentic"
