Let it cook, don't dare touch it for 25 mins

You need the slotted spoon to drain the meat as you take it out. And it works if I need to cut some of the meat while it's cooking.

I understand. It's a joke. Everyone has their special "roux spoon" that's usually wooden. I'm Cajun and I guess everything is an art to us.
