I've had lots of cheese. Just because it's orange and brick doesn't mean it's processed. It wasn't cheese before current form = unprocessed.
That being said, there IS such a thing as good processed cheese (but don't let the French hear you say that)

The smaller commercial dairy up the street does, and they're pretty 'standard'. French mimolette cheese uses it, and they don't mess around.
