Whole Foods has ramen?!?

Breakfast of not so much CHAMPIONS...

I like eggs what.

Instant breakfast

Using up some fried fish

Desperately trying to reduce portion sizes.

Yellow noodles (alkaline cooked spaghetti) and my tonkotsu broth

My first miso. If you refrigerate the broth it is solid. So much porkfat.

Mis en place. Gotta stay organized.

Apparently I was hungry. Sous vide tenderloin and sous vide pork belly.

Aromatic oils, katsuoboshi salt and Ivan's shoyu tare.

See the quarter inch of oil on that soup? That's good eatin'.

The solid stock is from the gelatin in the bones too, means you made a good one with proper bones :) my favourite ramen place does a 1/2

same. I fry sunny side up in toasted seseme oil, JUST enough to harden albumin, never flip, toss in hot broth to let it finish cooking. YUM.

Just because it's traditional doesn't mean it's low in sodium. "Traditional" ramen is pretty high in it because of the stock and ingredients
