They really don’t. Airbags are expensive and dangerous, so are disarmed when the ignition is off. At least in the U.S.
If the car is not running, then it makes sense. It just sounded crazy they wouldn't deploy if the car is parked and someone was in.
Another fun fact. Airbags used to kill the ignition when deploy but people would throw their cars in reverse and hit police cars to get away
